What do you do when you have very ripe bananas, a bit too ripe to just eat?? Make banana bread of course! What’s better on a chilly day than to have something warm coming out of the oven to have as a snack.  Your house will smell heavenly too!

This recipe for banana bread is so delicious you’d never guess that it is an incredibly healthy version.

BANANA BREAD

(adapted from a recipe from My New Roots)

Ingredients:

1/4 cup milk of your choice

5 tblsp. coconut oil

6 tblsp. maple syrup

1/4 cup coconut sugar

1 tsp. pure vanilla extract

4 ripe bananas mashed

2 cups spelt flour (if you can tolerate a little gluten, if not use brown rice flour)

1 tsp. baking soda

1 tsp. baking powder

½ tsp. sea salt

Optional:
1 cup chopped walnuts
¾ cup chopped dark chocolate

Directions:
1. Preheat oven to 350F.
2. Lightly oil and dust with flour a loaf pan
3. Put the milk, oil, maple syrup, coconut sugar, vanilla, and bananas in a blender and blend until smooth.
4. In a large bowl combine dry ingredients. Add banana mixture and combine using as few stroked as possible. Fold in nuts and chocolate.
5. Pour into a cake pan and smooth the top. Bake until a toothpick inserted in the center comes out clean, about 1 hour.
