I was craving something warm and nourishing for lunch today so I decided to make this super easy and fast recipe.  It’s so good!!  The texture and flavors for something that doesn’t require a lot of ingredients or time is awesome.  I encourage you to try it.



2 lbs. butternut squash cut in small cubes

1 chopped onion

2 to 3 sweet apples chopped, depending on the size (I used McIntosh)

4 cups low sodium vegetable broth

2 tbsp. olive oil

2 tsp. salt

1 tsp. pepper

1 tbsp. curry powder


Add olive oil to a heavy bottomed pot and saute onions until translucent, about 10 minutes.  Add butternut squash, apples, broth, salt, pepper and curry.  Cover and simmer for about 20 minutes until butternut squash is tender.  Remove from the heat and use an immersion blender to puree.  (Alternatively, put mixture in batches into a blender or food processor to puree.)

Optional toppings: Chopped cashews and parsley.  You could also put a dollop of plain yogurt or sour cream.
